Diabetes-Friendly Cooking: Bean Salad and Bulgur Salad

Bulgur Salad


  • 6 tbsp minced scallions.
  • 1 ½ cup bulgur wheat.
  • 3 cups water.
  • 1 ½ cups walnuts.
  • 1 ½ cups feta cheese.
  • 2 cups grapes or chopped apples.
  • Dressing:

o   3 Tbsp olive oil.

o   3 Tbsp lemon juice.

o   Salt and pepper.


  • Boil the water.  Add the salt, and pour it over the bulgur.  Let the mixture soak until the bulgur is soft.
  • Combine ingredients and chill.

Bean Salad

  • 2 cups red kidney beans (pre-soaked or canned).
  • 1/3 cup minced onion.
  • 1 clove garlic, minced.
  • ½ cup chopped celery.
  • ½ cup chopped carrot.
  • ½ cup diced tomato.


  • o   2 Tbsp white wine vinegar.
  • 3 Tbsp olive oil
  • 1 tsp lemon juice.
  • Salt and pepper.


  • In a medium salad bowl, combine all ingredients.  Cover and chill for ½ hour before serving.
