- 3 acorn squashes
- 2 tsp cinnamon
- 1 fresh pineapple
- 1 tsp ginger
- Slice the squashes in half and roast them at 350’F in covered casserole dishes with ½” water, until soft (40-60min).
- Peel, core, and slice the pineapple. Mashed together with spices.
- Scoop the flesh out of the squash halves and add to the pineapple mixture. Spoon back into the squash skins and bake another 5-10 minutes.
