Curry Pineapple Acorn Squash

Ingredients:

  • 3 acorn squashes
  • 2 tsp cinnamon
  • 1 fresh pineapple
  • 1 tsp ginger

Directions:

  • Slice the squashes in half and roast them at 350’F in covered casserole dishes with ½” water, until soft (40-60min).
  • Peel, core, and slice the pineapple.  Mashed together with spices.
  • Scoop the flesh out of the squash halves and add to the pineapple mixture.  Spoon back into the squash skins and bake another 5-10 minutes.

Delicious!
