Banana Tofu Chocolate Pudding

  • 1-2 bananas, frozen
  • 1 package soft, silken tofu (although firm tofu can be substituted)
  • ¼ cup powdered sugar
  • 5 Tbs unsweetened cocoa powder
  • 3 Tbs soy milk
  • Pinch cinnamon

Put all ingredients in a food processor and blend until completely smooth.  Chill until ready to serve.

Chinese Tofu with Garlic Sauce

  • 1 package extra firm tofu
  • 1 ½ Tbs soy sauce
  • Pinch sugar
  • 5-7 cloves garlic
  • Handful cornstarch
  • Vegetable oil

Cut the tofu into 1” cubes.  Roll them in the cornstarch, coating them completely.  In a large skillet, heat the oil and fry the cubes until crispy.  Set aside.  Mince the garlic and fry in the hot oil.  Mix the soy sauce with the sugar and add to the pan.  Add the tofu pieces back in and toss until coated with sauce.  Serve hot.
